Making Summer Sizzle

Whether you like a backyard BBQ or a poolside drink summer sun is on the menu.
I'd like to share with you my favorite dish and drink that have proven time and time again refreshing a salad and a cool cocktail.

Cucumber and Onion Salad
1 medium sweet vedalia onion, halved and sliced
2 cucumbers, peeled and sliced
1/2 cup sugar
1 pint of sour cream
1/2 cup of apple cider vinegar or white vinegar
1/4 up diced celery (optional*)
Mix sugar, sour cream and vinegar in bowl, add onions and cucumbers, celery* stir.
Cover and place in refrigerator overnight to chill and observe flavor. Serves 4.

Moscow Mule with a twist
2 ounces vodka (Kettle One, preferred)
1/2 ounce lime juice, freshly squeezed
3 ounces highest quality of ginger beer, chilled (Fever Tree Ginger beer, preferred)
In shaker mix crushed ice, vodka, lime juice and slice of lime together. Pour into a chilled copper mule topping off by adding the ginger beer. To me preparation of this drink is spot on!
Garnish: Spear slice of crystalized ginger and maraschino cherry on skewer. Serves 1.
